Great northern beans are one of the fastest cooking beans. They usually begin to fall apart after about one hour of cooking time, without pre-soaking. We usually cook them for about 2 hours. This variety of bean is great for soups. The #10 can holds approximately 5.5 pounds/12 cups of great northern beans.

Each #10 can is sealed with an oxygen absorber. If stored in a cool, dry place, beans should last 10+ years. In an emergency situation, boiling the beans in water for 20 minutes will kill any bacteria and will still give you some nutrition.
